🇨🇭Polymnie "Séduction OR" 2011 AOC du Valais - Domaine des Muses. 🥇Bought this wine on the spot when visiting the winery during the @concoursmondialdubruxelles in Switzerland in 2019. 📸Swipe for some pictures of more wines we enjoyed.👩‍💻About the wine…With this wine Domaine les Muses has become a member of the famous "Charte Grain Noble ConfidenCiel", created in 1996. It accounts for much of the success today of the sweet wines of Valais. Some 30 producers have banded together to encourage this tradition of great wines made from vine-dried grapes.It’s a sweet wine, a blend of overripe Marsanne and Pinot Gris grapes, dried on the vine.Fermentation and ageing for 18 months in barrels for each of the grape varieties before blending in stainless steel vats.🥺Opened the bottle last week and was rather disappointed: only withe fruits and sugar. 🤩But now… wow! Totally different. This wine needs air! 💛The colour is medium gold. 👃On the nose fresh and dried apricots, honey, figues, hint of vanilla, hay, yellow apple. 👄On the palate creamy, fresh, spicy, yellow and green apple, fresh and dried apricots, sapidity. Long, spicy and fresh finish. 🇫🇷Domaine de la Baume Viognier La Grande Olivette 2021, Pays d’Oc IGP🏰The history of Domaine de La Baume begins in 1880 when the PRAT family is convinced to be able to make great wines in the Languedoc wine region. At that time, the vineyard had been left fallow after the phylloxera crisis. Jean Prat, le père, followed up by his sons, succeeded.🇦🇺In 1990, the story takes a new turn with the arrival of the family Hardy, of Australian origin. The Hardy's have passed for much more than their knowledge, they have also brought a state of mind. In order to restructure the vineyards they have planted international varieties, initiated the harvest night and have introduced modern techniques of vinification and ageing.🇫🇷Since 2003, the winery belongs to the family Helfrich, of the well-known Grands Chais the France. 👩‍💻What about this wine…👀The colour is medium yellow.👃On the nose fresh gooseberries, apricot, pear, hint of citrus.👄On the palate round and a medium+ body. It accounts for much of the success today of the sweet wines of Valais. Some 30 producers have banded together to encourage this tradition of great wines made from vine-dried grapes.It’s a sweet wine, a blend of overripe Marsanne and Pinot Gris grapes, dried on the vine.Fermentation and ageing for 18 months in barrels for each of the grape varieties before blending in stainless steel vats.🥺Opened the bottle last week and was rather disappointed: only withe fruits and sugar. 🤩But now… wow! Totally different. This wine needs air! 💛The colour is medium gold. 👃On the nose fresh and dried apricots, honey, figues, hint of vanilla, hay, yellow apple. 👄On the palate creamy, fresh, spicy, yellow and green apple, fresh and dried apricots, sapidity. Long, spicy and fresh finish.
